Maple Ginger Carrot Pulp Muffins With Pecans

3 cups whole wheat flour

1 tbsp baking soda

1 tsp ginger

2 prepared flax eggs

1 tbsp vanilla extract

2 tsp salt

1 cup pure maple syrup / agave nectar

2 cup applesauce

2 tbsp vegan butter

2 cups carrot pulp

1/4 cup ginger pulp *optional

Frosting and pecan topping *optional

Bake at 350° for approximately 20 minutes.
